Usually available for ~$269. Caveat: the Cameo is a 12" cutter that is easily transportable and cuts very well (I have one) but it currently only works with its proprietary software in Windoze. It may be simple to get it running in Inkscape/Inkcut, or not. Updates as they happen.

+1 by Petesoper. This instrument runs standalone, unlike the others currently on the list.
The other instruments that require PCs can be the cool dudes for data capture,
but having something that can be immediately used will be a good thing too.

Other Suggestions

  • Bench power supply
  • CAT5/6 cable tester
  • Carts with wheels that can hold instrument/PC combos
